“LEAN Frog’s recommendation for workflow efficacy and inventory controls have substantially underwritten and increased profitability in the Child Nutrition Program (CNP). Specifically, the CNP program that essentially broke even (financially) in 2011 is now generating residual funding available for reinvestment into the classroom in amounts exceeding $5,000,000 per annum.” Jason W. Taylor, CPA, Chief Financial Officer, Huntsville City Schools

Huntsville City Schools (HCS) understands the importance of saving money in non-instructional areas and investing that money in student achievement. Today HCS is heralded as a technology leader for its Digital 1:1 Initiative that promotes individualized learning through a digital curriculum.
The LEAN Frog Approach
LEAN Frog performed our first assessments of the Huntsville City Schools CNP Department in late 2011. Using the Lean Six Sigma DMAIC (Define, Measure, Analyze, Improve and Control) tool, we identified opportunities for Meals per Labor Hour improvements. From those assessments LEAN Frog worked with the CNP team to develop and implement a department improvement plan across the 2011-2012 School Year. Since 2012 LEAN Frog has worked with the department to document and standardize CNP processes, track Key Performance Indicators, and address performance issues that arise.
Results
LEAN Frog’s goal was to help HCS standardize processes and identify revenue opportunities. Key improvements include:
- Development and documentation of standardized processes
- Development and documentation of Key Performance Indicators (KPIs) by kitchen to track performance on a month to month basis
- Deployment of a Breakfast in Classroom program to increase breakfast participation rates
